Sánchez Romate Hnos SA first started releasing brandy in the late 19th century. The firm now has over 100 years of brandy-making experience. Regulated under the strict auspices of the Consejo Regulador - the Brandy de Jerez regulatory body - and the even stricter controls of the bodegas of Sánchez Romate Hnos SA itself, the Cardenal Mendoza brand surpasses these regulations with ease, making it one of the greatest and most sought after brandies in its category. Cardenal Mendoza is still made according to the unique traditions specific to Jerez de la Frontera.The first stage in ageing Cardenal Mendoza is to run the new spirit into special 250 litre American oak casks for two years of static ageing. It is then introduced to the dynamic ageing that makes Brandy de Jerez so unique the system of criaderas y soleras. For Mendoza this means 500 litre casks, which have previously been used for ageing pedro ximénez (PX) and old oloroso wines. The spirit is then continuously blended though the solera process for many years, until it is drawn off for bottling. Cardenal Mendoza Carta Real has been created with the purpose of satisfying the most demanding brandy consumers. In 1981, with its eyes set on the new millennium, Sanchez Romate Hnos. set aside a reserve of "Cardenal Mendoza". This brandy has remained under the constant attention of its foremen since then. Time has created a unique brandy. The presentation of the brandy is sober and elegant like a "Carta Real" (royal letter).

Dark old mahogany colour. An intense, aromatic nose which offers all kinds of dried fruits including dates, raisins and prunes. With time in the glass, an awesome hit of oak and Oloroso sherry develops, as does apple strudel. A very well balanced brandy, that offers up calves leather, cedar, mahogany wood and black pepper, alongside a delectably juicy mouthful of plum wine, Christmas pudding and vanilla. The finish shows a good length with oodles of spicy, dark fruit and nutmeg.

Alternative wine closures are substitute closures used in the wine industry for sealing wine bottles in place of traditional cork closures. The emergence of these alternatives has grown in response to quality control efforts by winemakers to protect against "cork taint" caused by the presence of the chemical trichloroanisole (TCA).

Screw caps or "Stelvin caps" are closures made only from aluminium material that threads onto the bottleneck. They are the predominant closure used by New Zealand wineries.[8][9] This can be attributed in part to the New Zealand screw cap initiative which promotes the use of screw caps instead of cork. Screw caps form a tighter seal and can keep out oxygen for a longer time than cork. These benefits aid in maintaining the wine's overall quality and aging potential.

Vino-Seal, or Vino-Lok, is a plastic/glass closure released by Alcoa. Since its introduction into the European market in 2003, over 300 wineries have utilized Vino-Seal. Using a glass stopper with an inert o-ring, the Vino-Seal creates a hermetic seal that prevents oxidation and TCA contamination.

Zork is an alternative wine closure that seals like a screw cap and pops like a cork. The Zork closure consists of three parts; an outer cap providing a tamper evident clamp that locks onto the band of a standard cork mouth bottle, an inner metal foil which provides an oxygen barrier similar to a screw cap, and an inner plunger which creates the ‘pop’ on extraction and reseals after use.

The traditional crowned bottle cap has been used in the sparkling wine industry as a closure during the bottle fermentation process (méthode traditionnelle). Normally the cap is replaced with a cork before shipping, though recently some producers are releasing wines using the crown cap as their closure.
