Calle 23 tequila is produced in Zapotlanejo from agaves from the Highland region of Jalisco (fields between Arandas and Tepatitlan). The Highlands region grows plants that produce the perfect tequila tasting profile that Calle 23 wanted to achieve. Sophie Decobecq was born in Lille, northern France, back in the late seventies. Since a very young age the attraction to biochemistry drove her to study it at university, which she finished in record time. Her studies took her to Mexico City, where she first met 100% agave tequila and the whole aura around it. Guadalajara, Mexico, where step by step she started to enter the masculine world of tequila, starting to do some consulting works for distilleries. That was a long and difficult process, being French and especially being a young woman. It was 2003 when she first started working on her very own project, what would become Calle 23, defining the right profiles she was looking for, joined after a few years by her team. Sophie chose the Highlands region of Jalisco to harvest the agaves from, the fruity and spicy character of the plants appealing to her. The rest of the process taking place in the same area, in the town of Zapotlanejo. High altitude, with a hot climate, mixed with some heavy rains especially in the rainy season, gives the plants a great level of sugars. These taste notes, Sophie has done her best to keep and express in the tequila she produces. 3 years of hard work and many attempts, and she finally ended up with the perfect result she was looking for. Calle 23 was ready in the 3 profiles of blanco, reposado and Añejo. The spirit was ready, only a name was missing… celebrating those final tequila profiles with her team, she saw on the other side of the street the sign “Calle 23” and found this would be a great name for this great sharing moments.

Pale golden color. Aromas of olive, flan, spiced nuts, cedar, and golden raisin follow through on a silky entry to a dryish medium-to-full body with excellent liveliness, depth and balance. Finishes with a warming fade of milk chocolate, nuts, and minerals.

Closure: CORK

Alternative wine closures are substitute closures used in the wine industry for sealing wine bottles in place of traditional cork closures. The emergence of these alternatives has grown in response to quality control efforts by winemakers to protect against "cork taint" caused by the presence of the chemical trichloroanisole (TCA).

Screw caps or "Stelvin caps" are closures made only from aluminium material that threads onto the bottleneck. They are the predominant closure used by New Zealand wineries.[8][9] This can be attributed in part to the New Zealand screw cap initiative which promotes the use of screw caps instead of cork. Screw caps form a tighter seal and can keep out oxygen for a longer time than cork. These benefits aid in maintaining the wine's overall quality and aging potential.

Vino-Seal, or Vino-Lok, is a plastic/glass closure released by Alcoa. Since its introduction into the European market in 2003, over 300 wineries have utilized Vino-Seal. Using a glass stopper with an inert o-ring, the Vino-Seal creates a hermetic seal that prevents oxidation and TCA contamination.

Zork is an alternative wine closure that seals like a screw cap and pops like a cork. The Zork closure consists of three parts; an outer cap providing a tamper evident clamp that locks onto the band of a standard cork mouth bottle, an inner metal foil which provides an oxygen barrier similar to a screw cap, and an inner plunger which creates the ‘pop’ on extraction and reseals after use.

The traditional crowned bottle cap has been used in the sparkling wine industry as a closure during the bottle fermentation process (méthode traditionnelle). Normally the cap is replaced with a cork before shipping, though recently some producers are releasing wines using the crown cap as their closure.
